Raw Carrot Cake Energy Bites

A no-bake, gluten, nut, dairy and refined sugar-free snack that is also equal parts delicious and kid-approved! Say it ain't so! These energy bites are simple to prepare, easy to pack and school-safe.

Main Ingredients
1 cup carrots, grated
5 med jool dates, pitted
1 cup rolled oats
1/4 cup sunflower seeds
2 tbsp ground flax seeds
2 tbsp coconut oil
1 tbsp cinnamon
1 tsp maca powder
1/4 tsp nutmeg and cloves
Preparation
1.Place all ingredients in order, in a food processor and pulse until smooth and combined. Using a spoon, scoop about a tablespoon of the mixture at a time and roll into uniform balls.
2.Makes about 17-20 balls depending on size
3.Refrigerate or freeze the raw carrot cake energy bites in an air tight glass container.
