Shrimp and Avocado Quinoa Bowls

In a medium bowl, combine the shrimp, oil, and spices. Heat a large pan to medium-high heat for 2 minutes. Once the pan is hot, coat the pans with a light drizzle of oil. Cook the shrimp for 2 minutes per side or until charred and cooked through. Divide zucchini into two serving bowls. Top each bowl with half the quinoa, shrimp, avocado, and onion. Drizzle with lime, or your favourite dressing.

Main Ingredients
1 avocado, pitted and sliced
1 large zucchini, cubed
1/4 cup onion, diced
1 cup quinoa (cooked according to package directions)
1/2 pound shrimp, shelled and deveined
1 tablespoon olive oil
lime
spices:
1 teaspoon paprika
1 clove garlic, crushed (or 1/2 teaspoon garlic powder)
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon thyme
1/4 teaspoon oregano
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
Preparation
